Burrito is the diminutive of the Spanish word burro (donkey) - meaning little donkey. Our friends from LEBENSBAUM have two new spice creations that have it all. Together with our sunflowerHACK we make the Mexican classic look vegan and make the little donkeys shine. You don't need 20 spices here, but only two spice mixtures to get the unmistakable Mexican taste.
INGREDIENTS FOR FIVE BURRITOS
76g sunflowerHACK
3 tsp Taco and Burrito Seasoning TREE OF LIFE
400 g diced tomatoes
250 g corn kernels, drained
1 can of kidney beans, washed
1 red bell pepper, diced
1 green pepper, diced
1 chili pepper, deseeded & chopped
2 onions, diced
2 tbsp tomato paste
2 cups of crème fraîche vegan
200 g cheese, grated vegan
sunflowerFamily ORGANIC olive oil
5 wheat tortillas
INGREDIENTS FOR THE GUACAMOLE DIP
1 avocado
2 tsp Guacamole spice TREE OF LIFE
if required: 1 clove of garlic - pressed or grated
for extra heat: jalapenos or chili
Preparation
Sunflower HACK with 100 ml water and 1 tsp taco - and burrito seasoning from LEBENSBAUM moisten briefly and marinate. Heat olive oil in a saucepan, fry onions and peppers, add sunflowerHACK and sauté well.Add tomato paste and chili and roast. Now stir in the diced tomatoes with their liquid and the corn kernels. With another teaspoon of Taco and Burrito Seasoning by LEBENSBAUM taste. Let the whole thing simmer for a few more minutes until the liquid has almost evaporated.The vegan crème fraîche with 1 tsp Taco and Burrito Seasoning by LEBENSBAUM stir until creamy and spread over the tortillas (leave the edges free). Spread 3-4 tbsp sunflowerHACK filling on each tortilla and sprinkle with grated cheese. Now roll up the tortillas into burritos. Spread 2 teaspoons olive oil and remaining filling in a casserole dish and place the burritos in it. Spread the remaining cheese on top.
Bake in the oven preheated to 200 degrees (middle rack) for 5-6 minutes.Ready to serve as soon as the cheese has melted.
For the guacamole dip chop the avocado and add 1-2 teaspoons Guacamole seasoning by LEBENSBAUM mix. If you would like it a little spicier, you can add jalapenos or chili.
